Sautéed Broccoli

Ingredients:

  • One head of broccoli, chopped into bite-sized florets

  • 2 tablespoons coconut oil

  • 1 teaspoon finely chopped ginger

  • 1 teaspoon finely chopped garlic

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • A couple of drops of fish sauce (optional)

  • 1/2 teaspoon sea salt

  • 1 teaspoon honey

  • 1/3 cup finely chopped cashews

Instructions:

  1. Prepare the Broccoli: Start by washing and chopping the broccoli into bite-sized florets, ensuring they are uniform in size for even cooking.

  2. Heat the Pan: In a large pan or wok, heat the coconut oil over medium-high heat until it melts and becomes hot.

  3. Add Aromatics: Add the finely chopped ginger and garlic to the hot oil. Sauté for about 30 seconds until fragrant, being careful not to let them burn.

  4. Stir in Broccoli: Add the chopped broccoli to the pan. Stir-fry the broccoli for approximately 5-7 minutes, or until it becomes tender yet still crisp and vibrant green.

  5. Sauce it Up: Drizzle the soy sauce, sesame oil, and a couple of drops of fish sauce (if using) over the broccoli. Stir well to evenly coat the broccoli with the flavorful sauce.

  6. Sweeten and Season: Sprinkle the sea salt and drizzle honey over the broccoli. Stir-fry for an additional 1-2 minutes to allow the flavors to meld together.

  7. Cashew Crunch: Finally, add the finely chopped cashews to the pan. Stir-fry for an additional 1-2 minutes, allowing the cashews to become lightly toasted.

  8. Serve: Transfer the flavorful broccoli stir-fry to a serving dish. Garnish with additional cashews, if desired, and serve hot as a delicious and nutritious side dish..
