Ingredients:

  • One package of 6-8 boneless, skinless chicken thighs

  • 2-3 tablespoons sea salt

  • 1 tablespoon turmeric

  • 1 teaspoon cumin

  • 1 tablespoon coconut oil

  • 1/4 cup dried or fresh thyme (stems removed if using fresh)

Preparation:

  1. Preheat and Prepare: Start by preheating your oven to 350°F (175°C). While it heats up, place a cast iron pan on medium-high heat and add 1 tablespoon of coconut oil to it.

  2. Season the Chicken: Rub each piece of chicken thigh with the seasoning blend. This combination of sea salt, turmeric, and cumin will infuse the chicken with a flavorful kick.

  3. Thyme Magic: Sprinkle the chicken thighs with dried or fresh thyme. If you opt for fresh thyme, make sure to remove the stems. Thyme adds a fragrant herbaceous note to your dish.

  4. Sear to Perfection: Place the seasoned chicken thighs in the hot cast iron pan. Allow them to sear for about 10 minutes until they achieve a beautiful golden brown color.

  5. Bake for Tender Perfection: Once the chicken thighs are nicely browned, use an oven mitt to carefully transfer the cast iron pan directly into the preheated oven. Bake the chicken thighs for an additional 10-15 minutes. Keep in mind that the cast iron pan becomes extremely hot, so exercise caution.

  6. Cool and Serve: After baking, allow the chicken thighs to cool for a few minutes. Serve them alongside your choice of vegetables, a salad, and a healthy complex carbohydrate like sweet potatoes.
